ועוד שאלתי על עצמות מלילות הירך והדקין ובני מעים אם ראוי לבעל נפש לפרוש מהם לפי שאין בקיאין בניקור גיד וחלב ובהוצאות גידי הדם שבדקין או אם הם מותרים:

I also asked regarding the bones¹ of the thigh, and the small and large intestines. Is it correct for a pious person to abstain from eating these, because we are not experts in the removal of the forbidden fats and sinews around the intestines, or are they permitted?²

¹ Some versions have 'parched thigh-bones', meaning unclear
² There is a tradition from the Gaonim not to eat the fats around the intestines because of small veins that might not be removed (see Halachot Gedolot 65:2) Later authorities permitted them (see Beit Yosef Yoreh Deah 65).

והשיבו אין גוזרין גזירה על הציבור אא"כ רוב ציבור יכולים לעמוד בה וע"א נאמן באיסורין ובלבד שיהי' בקי וכל הפורש בעת שאינו ראוי לו מעשיהו מעשה לעג:

They responded: *"They do not issue a decree on the people that the majority are unable to withstand," (Horayot 3b:6) "and one witness is credible in matters of prohibitions" (Gittin 2b:5)*- as long as they are knowledgeable. And all who abstain from something when it is not appropriate to abstain, their actions are considered foolish.
