אחר שהדיח הבשר ימתין עד שיטפטפו המים קודם שימלחנו, כדי שלא ימס המלח מחמת ריבוי המים שעודנו על הבשר ולא יוציא דם, אבל לא ימתין עד שיתנגב לגמרי, דאז לא ימס המלח כלל, וישאר יבש ולא יעשה פעולתו להוציא הדם.
